does resting any meat have to sit as long as you cook it? Like when cook a
whole pig outside for 12 hours do i leave it sit that long or half the time
or just what? Because already start the pig a day early if have to let it
rest as long it would take 2 days before serving.? just wondering

I think amazing gravy is a pseudonym for Low acid high alkaline
juice..Highly rendered meat ‘Juices ‘ are pH 4.
Try Knorr liquid and keep out of sight from family pets ( Like cats !)
Low pH can damage worktops..Think Gordon!!!

The gravy looks a bit watery… maybe more reduction or thicken with flour
is needed?

Hi, Ramsay,

Wouldn’t gravy taste better by simply adding knorr cubes, since Marco
Pierre pretty much swears by them.
