you don’t have to put butter, oil or bacon to have a turkey that is not
dry, it turns out great with coriander seeds, onions, garlic, paprika for
that nice color, and bay leaves and whatever you like

I’m pretty happy with how I’ve gotten my turkey, but I didn’t know about
the skin technique before! I will have to try that, I can see how it’ll add
a ton more flavor.

So, you don’t truss the bird? I do love using bacon this way for foods that

Done! Have to watch the temperature of the bird, mine was 15.22 lbs so
according to Gordon it should cook for 3 hours and 22 minutes. But it was
done after 3 hours, slightly over done. The thigh temperature was about 180
degrees. I am not making gravy so I am eating the bacon strips. The bacon
is so good, can taste the lemon, and turkey and bacon flavor and it is
crunchy. Mmmm. Maybe this recipe is for cooking the best bacon and you just
throw the bird away. Anyway the turkey will rests for a couple hours and
then I will try a slice.

220 celsius = 430 fahrenheit. 180 celsius = 350 Fahrenheit.

I’m a beginner but I am going to try this. Got a free turkey sitting in the
freezer. Dry turkey has always been a problem.

Normally my wife buys a butterball turkey for cooking family dinners. When
I went down to defrost the turkey I only saw a young turkey so I put it in
the fridge to thaw. This morning I started prep and getting everything
together (my first turkey dinner on my own), we had local veggies and local
salt beef for the boiled dinner (local custom) to go along with the turkey
(I know not up to your standards but local and traditional flavorful…if
you choose.

Everything was perfect, after browning at 220c for 10 and adding bacon, we
cooked it at 175-180 for 2h15 minutes and it was I thought a little over
cooked and rose to 189c then after resting for 45 minutes was back down to
175c. When cut it was still very moist and not dry at all….amazing.

Only difference with the gravy was instead of stock we used the “pot
Liquor” from the boiled dinner” (750-1000ml) and didn’t include the lemon.

We had sides of Fresh turkey “stuffing” of mashed potato, onions and savory
(that wasn’t cooked in the turkey but in the boiled dinner) and amazing
gravy. The audience was two different groups – my parents from another
province and our best friends that are local. I was a excellent mix of
both styles and it was very interesting in the kitchen at times trying to
please everyone when all the suggestions were coming in. I didn’t tell
them I was cooking your recipe… 🙂

It looks like he skipped a step. When the turkey comes out after 10
minutes, it really isn’t brown. Then he bastes it, and suddenly it is
brown. So he popped it back into the oven after the first baste before
taking it out to put bacon on it.

Also worth mentioning that the skid got golden brown, even under the bacon.
It sure looks good.

I have a guest at our Christmas Party who is allergic to butter. Does

I have never cooked a turkey before. I bought a turkey last week and
decided to try to experiment with cooking it this morning. I learned how to
cook a turkey from this video and followed him. The result came out
