The reason to never boil miso is because it is a fermented product.
Anything fermented contains good bacteria, or probiotics, boiling it kills
the probiotics. It has nothing to do with flavor.

Huh, the broth can be improved by making the konbu ahead of time and adding
the miso last. This method is a great balance of time and quality.
Moderately easy to make vegan.

wwwwwww I love how we asians just judge every step when it comes to cooking.
You don’t boil miso.
You don’t cook noodles in the broth directly.
You don’t add in ginger without frying them first.

Well to be fair I looked at the title and realized he never said if the
dish was Asian or Japanese, it just says exactly what it was, Miso broth.

I don’t know why every time I see Western recipes with miso soup they add
the paste in first, whereas Japanese recipes they add it last.

I’ve heard that you shouldn’t boil miso, it breaks down and kills the ”
whatever organisms that are inside ” , is that true?

you shouldn’t boil your miso but, I understand with the poaching of the egg
and whatnot haha also, as a small suggestion you should try mixing white
and red miso together, somewhat different flavours but, they mix amazingly
well!

I love Gordon and his brilliant recipes, but you have to admit that he’s
doing wrong for boiling miso. Nothing about traditional or not, it’s just
WRONG.

Do not boil miso and do not “stir fry” using olive oil. Cook the veggies (
except greens) egg and noodles in a water and soy sauce broth. Just before
serving add miso to bowl and add in a little broth and dissolve the miso.
Then add everything to the bowl. Top with green onions. Boiling miso makes
it taste gross.

Olive oil has too low a smoking point to stir fry you end up steaming the
food and it doesn’t have the right texture. Use canola or peanut oil. If
you’re trying to introduce British people to word cuisine, then do it right
even if it’s still simplified.
