I prefer Koran sea salt, which will give the best result in my opinion. 🙂
I’ve never used rock salt for kimchi but I don’t see any problems with it
so try it! 😀

The kimchi from stores I never like. But the one my friends father makes is
so amazing I couldn’t resist. I like the flavor of a lot of spices, but not
spicy. If that makes sense.

Can you substitute Korean flakes to Korean chili powder ?

Those are made from same type of chili. Usually us flakes for kimchi and
powder for gochujang… but I would think it will work, just be careful how
much you put it in though.

I am making your recipe as presents to my girlfriends for Christmas! Just a
few questions, can you give me the name of the “korean chilli powder” you
used for the red kimchee? Can you give me the name of the “korean fish
sauce” you used (the one after the anchovy fish sauce) you used in the red
kimchee? Also..I wrote down your recipe for both of the flavoring
pastes-did you only use 2 heads of nappa in the video?
