Kefta mkaouara, Moroccan Meatballs & Egg in Spicy Tomato Sauce Ingredients:
For the Meatballs
1/4 lb. (150g) Ground beef or lamb (or a combination of the two)
1/4 of Medium onion, chopped very fine
2 tsp. Paprika
1 tsp. Cumin
1 tsp. Salt
1/2 tsp. Ground cinnamon (optional)
1/4 tsp. Pepper (optional)
1/4 tsp.Hot paprika (you can substitute to cayenne pepper)
1/4 cup fresh cilantro, Chopped (you can substitute to parsley)
For the Tomato Sauce
2 lbs. (1 kg) fresh, ripe tomatoes
2 Tbs. Olive oil
1/4 of Medium onion, very finely chopped
2 Cloves garlic, minced
1 1/2 tsp. paprika
1 1/2 tsp. cumin
1 1/2 tsp. salt (more for taste)
1/2 tsp. hot paprika (you can substitute to cayenne pepper)
3 Tbs. Fresh cilantro, chopped
4 eggs

There is so much waste in the chopping the tops off the tomatoes and
topping the garlic, etc. That is precious food being thrown away! Good
tip with removing the skin from the tomato. That said, I am looking
forward to this recipe. It looks delicious!
