I’ve never heard anyone pronounce fillet like fill-it before. i dunno what
language it originates from but it’s surprising to me that he pronounces it
that way, considering he speaks fluent french.

If your knife is sharp enough you can just pull the skin while keeping the
knife at a steep angle and the skin will slide right off.
