I like his food but I want to point out one thing. As a person who lives in
Hong Kong, the ingredients Gordon used are very expensive and very
difficult to buy. A university graduate in Hong Kong only have a monthly
salary of $1000 US dollars. However, even the basics like olive oil, it
costs you more than $40 for just 1.5L and $20 for 250g of butter. We only
have have small supermarkets and grocery stores, no clubs so we can’t buy
in a bulk for cheaper prices. Also, many things cannot be bought here. You
can’t find double cream, some common vegetables in Europe, European
sauces…etc. It is also even extremely difficult to buy a filet and it
also costs you $150 for the size of a beef wellington (my own experience).
It’s a shame I can only watch Gordon make but not myself.

i always lightly cut the fat (but not the meat) before putting it into the
pan, makes more fat come out and looks fantastic in the end.

mine was a little thicker, so I just put it on the oven for 11-12 minutes
and whammy, it was on point.

Hmm, how would one go about cooking a skinless duck? I ask as at butcher
time I skin my ducks just like I do my chicken. So far I have seen any one
cook a skinless duck. Any thoughts to share about cooking skinless duck?
