Ingredients

190 Grams of butter
1 Teaspoon of vanilla essence
125 Grams of brown sugar
1 Large egg
150 Grams of self raising flour
100 Grams of plain flour
1/2 Teaspoon of baking soda
75 Grams of desiccated coconut

Filling

75 Grams of butter
1/2 Teaspoon of vanilla essence
190 Grams of icing sugar
2 Tablespoons of milk

Raspberry jam

Okay, is it possible to make this without the coconut? I really dislike the
taste of it, and even if it is mixed in well, I’ll still taste it in the
cookie which would just ruin it for me. If possible, do you recommend any
substitutes or is it good without it?
