Chinese Fried Rice Ingredients:
2 Tbs. Cooking oil
2 Cloves garlic, chopped
1/4 of Onion, small diced (approximately 1/2 cup)
1/4 cup Carrot, small diced
2 oz. Chinese sausage, small diced
2 oz. Beef, cut into one bite sizes
2 eggs, beaten, seasoned with salt and pepper
2 cups Cold Jasmine rice, recommended a day old
2 Tbs. Soy sauce
1 Tbs. Dark soy sauce (Can be substitute regular soy sauce)
A small pinch of sugar
4 Green onions, chopped

*Remember, you are the boss in your kitchen, substitute proteins, vegetables and even soy sauce for your taste!

Thank you for explaining the different use of rice. I cannot wait to try
the jasmine rice. I do have a question, is there a difference between
korean style soy sauce and soy sauce from the generic (kikoman) brand?

You make an excellent point about using cold rice! In Chinese it is called
“fried cold rice” because it is best to use rice made the day before that
has been chilled to reduce the moisture, so then the rice won’t stick
together or be soggy when you fry it. I learned that from my iron chef dad
lol :)

I eat fried rice every day! I call it my world famous fried rice because
there’s nobody who can prove me wrong, hehehe. My world famous trick is to
scramble the eggs in the pan first, then remove them. That way they stay
bright like pieces of gold to be added back at the end along with a
crumbled sheet of seaweed and sesame seeds. World famous! lol :P
