540 grams sounds very specific, but how big is that can of milk? Wouldn’t
be helpful to give also the right proportions, please?

I’m just thinking strawberry / orange flavouring would push this up in my
estimation.

This isn’t really red velvet fudge, it’s white chocolate fudge made red.
Red velvet cake is given the name because of the faint red tinge to the
chocolate brown it gets from a chemical reaction between the coco powder
and vinegar with buttermilk (though now days it gets it from beet powder
since cocoa powder is processed differently and the chemical reaction no
longer occurs, if you get the higher quality ones, and red food coloring if
you get the cheap one). Even with red food coloring, red velvet cake is
based around cocoa powder and chocolate flavor. The closest thing to
chocolate in white chocolate is cocoa butter which doesn’t carry the flavor
of the chocolate. This is pretty much as far from red velvet as possible.
